Keeping it in the family

Shellfish techniques passed down.
Shared through books and masterclasses.

Rosemary Williams has fond memories of being in her grandad Stanley Holbrook’s fishmonger shop, seeing the fresh catch come in and preparing it for sale.

She’s now using those memories, notes, family pictures and information to publish a series of books called Prep That Fish.

Books
In 2016, she started to write her first book about crab, calling his technique ‘The Holbrook Method’ in honour of her Grandad. He developed a unique method to get the most meat out of the crab, with no shell in the meal – other techniques make this hard to achieve. We’re lucky to know it now – Rosemary was the last in the family to know how to do it.

Masterclasses
Along with the books, Rosemary also holds regular masterclasses where her small groups of guests find out not only how to prepare the shellfish, but how to choose it and where to buy it from. She also shares her recipe, garnish and seasoning tips, with family trivia and memories peppered in too.

Masterclasses are for everyone – the home cook who wants to learn more about shellfish and learn some quick and easy recipes, plus home chefs who want to add something new to wow with.
Chefs are also invited to add the shellfish specialism to their skills, learning the most effective methods and of course, preparation and serving suggestions to inspire them too.

Within the three-hour masterclass, you will do just that – master the technique and have a recipe to try again at home, whether it’s for a fast and nutritious mid-week meal or to impress guests.

Rosemary also runs masterclasses throughout the year.
Choose a date and book on, or you can ask her to run privately for you and a group of up to six people.

She holds them at her home in North Kent, or she can come to your home, restaurant or café to host an event.
