Rosemary Williams has fond memories of being in her grandad Stanley Holbrook’s fishmonger shop, seeing the fresh catch come in and preparing it for sale.
She’s now using those memories, notes, family pictures and information to publish a series of books called Prep That Fish.
In 2016, she started to write her first book about crab, calling his technique The Holbrook Method. He developed a unique method to get the most meat out of the crab and no shell in the meal – other techniques make this hard to achieve. We’re lucky to know it – Rosemary was the last in the family to know how to do it.
Along with the books, Rosemary also holds regular masterclasses where her guests find out not only how to prepare the shellfish, but how to choose it, where to buy it from, plus recipe, garnish and seasoning tips, with family trivia and memories peppered in too.
Home and professional chefs benefit from gaining new skills, confidence and sense of achievement.
Imagine your next dinner party where you prepare the shellfish yourself – your guests will be wowed!
